Double Chocolate Banana Bread

It’s Banana Bread, but better, because chocolate makes everything better, right? My kids were skeptical. They said, does chocolate go with bananas? And I had them all convinced within one bite.

Ingredients

  • 3 ripe bananas mashed
  • cup oil
  • cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • cup cocoa powder
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 tsp instant coffee granules dissolved in
  • ¼ cup boiling water
  • 1 cup chocolate chips divided

Instructions

  • Preheat the oven to 350℉/180℃.
  • Prepare a loaf pan lined with baking paper.
  • In a large mixing bowl whisk oil, sugar, egg and vanilla until light and fluffy.
  • Add in mashed bananas and mix to combine.
  • Using a spatula fold in flour, cocoa powder, salt and baking powder.
  • When all combined pour in the dissolved coffee and mix.
  • Mix in about ¾ cup of the chocolate chips.
  • Pour mixture into the prepared loaf pan and top with remaining chocolate chips.
  • Bake for 1 hour or until a toothpick inserted into the middle comes out clean.

Notes

Best served warm or room temperature with butter!
This chocolate banana bread freezes well if you want to make it in advance. Just warm up for a few minutes in the oven before serving.
