I’m excited to share this lemon loaf recipe with you guys, because for those that know me, you know I have no patience for patchky recipes. This is a super simple basic cake, upgraded to be a show stopper on your spring/ Shavuot table.

What is lemon loaf cake?

Lemon loaf is a classic pound cake flavoured with lemon. It’s a best seller at Starbucks, and a family favorite homemade!

I wanted to elevate the classic a bit so I decided to try adding berries to the batter and the glaze, and it came out amazing!

How to make easy lemon loaf from scratch?

This cake is so easy to make and just takes a few minutes to put together. The first step in any baking adventure is to gather all your ingredients:

  • Flour: all purpose flour works best here
  • Butter: softened to room temperature
  • Egss: also room temperature
  • Sugar: I use white granulated
  • Sour cream: I use 15% fat content
  • Freshly squeezed lemon juice: you can also use store bought
  • Lemon zest
  • Vanilla extract
  • Salt: sea salt or kosher salt
  • Baking powder
  • Frozen or fresh strawberries or raspberries
  • Confectioners sugar
  • Strawberry or raspberry jam for the glaze

    Beat ingredients together

    Add berries to batter

Once you have all your ingredients measured, you’re ready to start baking!

  1. Mix the dry ingredients and lemon zest together, set aside.
  2. Beat the eggs, sugar, butter and vanilla for a few minutes until light and fluffy.
  3. Add in the dry ingredients alternating with the lemon juice and sour cream.
  4. Pour the batter into a loaf pan lined with parchment paper.
  5. Press the berries into the batter.
  6. Bake!
  7. While the cake is baking, prep the glaze: Mix confectioners sugar with lemon juice and jam.
  8. When the cake is totally cool pour the glaze over the top and decorate with edible flowers (optional!).

How to store this lemon loaf recipe?

The best way to store this cake is covered in plastic cling wrap on the counter for a few days, or in the freezer for longer. See below for freezing instructions. If you want to prep this cake in advance it’s best to keep the glaze separate and assemble before serving.

Can you freeze this lemon loaf recipe?

Absolutely! This lemon cake freezes beautifully. It’s best to freeze this cake without the glaze if preparing it in advance. Wrap the cake tightly in cling wrap and freeze in a ziplock bag for up to 3 months.

I really love the combo of berries and lemon so I wanted to create a strawberry glaze to go with this lemon loaf. The strawberry glaze is super easy to make, you just add a bit of jam to your regular lemon glaze, it not only adds flavor but it also adds beautiful color.

Edible flowers

Have you ever tried edible flowers?! They are so beautiful it’s mind blowing! I have yet to taste them 😉 since I’m not a very adventurous eater, but I am so so happy to use them as garnish! It really takes everything to the next level, and this lemon loaf is no exception.

Lemon Loaf Recipe

Ingredients

  • 1 ½ cup all purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup butter softened
  • 1 cup sugar
  • 2 L eggs
  • 1 teaspoon vanilla extract
  • zest of 1 lemon
  • 2 Tablespoons lemon juice
  • ½ cup sour cream
  • ⅓ cup frozen strawberries

Strawberry Glaze

  • 1 cup confectioners sugar
  • 1 teaspoon strawberry jam
  • 1-2 Tablespoons lemon juice
  • edible flowers optional

Instructions

  • Pre-heat oven to 350°. Line a loaf pan with parchment paper.
  • In a medium bowl mix the flour, baking powder, salt and lemon zest. Set aside.
  • In the bowl of a stand mixer (or using a handheld beater) beat the butter, sugar, eggs and vanilla for 2 minutes.
  • Alternate mixing in the flour mixture and the lemon juice. Add in the sour cream and mix until combined.
  • Pour batter into prepared loaf pan and add in the frozen strawberries.
  • Bake for 40-45 minutes until a toothpick entered into the center comes out clean.
  • Let cool completely on a wire rack.
  • While the lemon loaf is cooling prepare the glaze.

Strawberry Glaze

  • In a small bowl mix the confectioners sugar with the jam and 1 Tablespoon of lemon juice. Add a little bit of lemon juice at a time (not more than ½ teaspoon at a time) until you have a thick but pourable consistency.
  • Pour glaze over cooled lemon loaf and let set.
  • Decorate with edible flowers if using.

Fun stop Motion Magic to get ready for the wedding last night!

Ok let’s be honest. 
Comfort is my number 1. 
Always was and always will be. 
I’m super sensitive when it comes to touch/ feel etc so sweatshirts, cotton tshirts, leggings, sweatpants, cotton black skirts… that’s all I ever want to be wearing.. and thankfully that’s what I do!

Did I have an amazing time last night?! Yes!!!
Would it have been even better in sweats and no makeup? Duh!!!

But I will say, if I have to be wearing a full face of makeup- I’d want @eliannamakeuup to be doing it! She was super quick, and she was able to do something that complimented me but also not look like too much- and it stayed on ALL day and ALL night!!! Super impressive!

Those fake eyelashes on the other hand… 🫣

(Also, super random… I ended up with different shoes 😂 but this was option 2…)

✨Behind the Scenes✨ Here’s how I made the c ✨Behind the Scenes✨

Here’s how I made the characters change colors in the @beitissie stop motion…

1️⃣ First I asked the amazing @viculsh to illustrate and design these characters for the project! ❤️❤️❤️
2️⃣ Then I cut out with the @cricut_il and put together 5 of each character in black and white and in color. 
3️⃣ Then I imagined how I want them changing color and I cut the color characters in 4 stages, a little bit more each time. 
4️⃣ Then I glued each of the color parts that I cut onto the black and white characters, so that each one had a bit more color than the last!
5️⃣ I lined up all the characters to make sure it made sense in sequence.
6️⃣ And then I animated them, but replacing each one until I got the the fully colorful version!

✨Tony’s✨ Some behind the scenes from a quic ✨Tony’s✨

Some behind the scenes from a quick personal shoot.

The last few weeks have been super intense for me.
I got sick 😷 (which is tfu tfu tfu pretty rare for me) and 4 weeks later I got worse before getting better. Thankfully antibiotics are taking care of me now 😅..

But all the while I was trying to work (on some insanely exciting projects I CANNOT wait to share!) and rest, but mainly work. So I def didn’t have time for creating content for fun, or posting or keeping up to date etc..

So today when my husband called and asked if I wanted him to bring me something, I said “chocolate”. Now, I’m a salty first girl. I’ll (almost, apparently) *always* want fries before sweets, but that’s the first thing that came to mind.

When he came home with this @tonyschocolonely bar, I thought, can’t eat this! Have to shoot it first 📸😂

And so… here we are! We made it to the end of January, we all deserve a gold medal 🥇 (or some emotional chocolate 🍫). Who wants a piece?

It seems fitting that my first paper art stop motion would be my morning coffee ☕️ 

Had such a hard time figuring out this new @cricut_il machine! I thought it would be more user friendly and intuitive- but alas! There’s a big learning curve, which I’m sure I’ll eventually figure out (5 million YouTube videos later).

Thankfully @tam_man177 doesn’t scare easily and was willing to sit and play with me for hours to pull this off! But now we have something to show for it 😍

Also super fun to feature @shanakoppel’s Hebrew “boker” gif that I love and use every morning in my stories!
